A working guide from the Ramen Mob kitchen: what separates a proper bowl from a sad one, which broth style fits you, and where to slurp — KL, PJ, Sunway, all the way up to Genting.

What "best ramen" actually means

Strip away the hype and the best ramen in Malaysia comes down to three things: the broth (was it built from bones over many hours, or from a paste?), the noodles (fresh, firm, made to hold the soup) and the toppings (torched to order, not fished out of a chiller). Everything else is decoration.

Our answer is Hakata-style: the ramen tradition of Fukuoka, built on tonkotsu — pork bones boiled until the collagen surrenders and the broth turns thick, cloudy and creamy. At Ramen Mob we make it from scratch and let the pot run 16+ hours. That's the entire secret. There's no shortcut, which is exactly why it tastes the way it does.

Know your broth: the 8 bases

Every bowl at Ramen Mob starts with one of eight soup bases built on that same signature pork-bone broth — then you pick one of seven meats. If you're new, this is the map:

  • Shiro (S) — the pure signature tonkotsu. Start here at least once.
  • Kuro (K) — black garlic oil over shiro; the press favourite.
  • Aka (A) — spicy chilli miso oil; mildly spicy, very creamy.
  • Kuraka (KA) — black garlic and chilli miso. For strong-flavour people.
  • Spicy Mala (M) — málà paste meets tonkotsu. Numbing, addictive.
  • Kare (C) — Japanese curry blended in. Rich and slightly sweet.
  • Kimchi Kara (KK) — sour-savoury Korean twist with kimchi.
  • Niboshi Shoyu (NS) — shoyu with dried-anchovy umami depth.

Prefer it dry? Go mazesoba — Nagoya-style brothless ramen coated in pork lard, black garlic oil or chilli miso, finished with an onsen egg.

Ordering like a regular

  • First-timer: Shiro Chashu (S5, RM29.90) — the baseline that explains everything.
  • The press pick: Kuro Yakibuta (K6, RM31.90) — torched thick-cut pork belly over black-garlic broth.
  • Heat seeker: Spicy Mala Chasu (M5, RM29.90) or the Kuraka base if you want garlic with your fire.
  • No meat / low carb: any base Meatless (RM24.90); swap to zero-carb konjac noodles for RM6.90. (Broths are pork-bone based — we're not a halal restaurant.)
  • Not a soup day: Nanban Karaage Donburi (D3, RM18.90) — the top-seller rice bowl.
